Ah the leftovers that never seem to end! Breakfast was a leftover gingerbread “piggy” from Mi Tierra’s bakery with half a glass of CM organic milk. It was surprisingly moist considering it was baked on Saturday.

I also had some leftover berries that were getting kind of mushy. By the end of the day they started melting! Red juice filled the bag.

Today I also worked on making sure that I was hydrated. My goal is to drink 1/2 my body weight in ounces each day (unless I do something active, in which case I drink more). I bought a stainless steel 20 oz water bottle to drink from and refill throughout the day. Having a measured glass that I can take anywhere really helps me keep track of my intake. Sadly, I forgot my lovely bottle at home this morning
But I found a glass that I think was about the same size.
For lunch I made tacos out of leftover brisket and a side of my “pepino salad” (pepino = cucumber in Spanish).

It was pretty filling but by 5:30 I started getting the munchies. To calm my tummy I broke off a piece of dark chocolate
Dinner was more leftover brisket, “pepino salad,” refried black beans, and a new addition of Kashi 7 Grain Pilaf. Uuuugh! I’m so SICK of meat!!! I definitely need to make sure the rest of my meals this week are a bit lighter.
The Pilaf was nothing special. It was bland but I liked the texture and it was extremely easy to make.

After dinner I chilled out with the father-in-law and watched a little Top Chef and Top Chef Masters. Its amazing to me how creative the contestants can be with a handful of ingredients and 1 only hour to prepare! One of the challenges required that the chefs use ingredients from vending machines! I was totally grossed out but impressed at what they came up with. I often wish that I could attend culinary school. And who knows? Maybe someday I will
